I haven't used a deep fryer in so long but what I used to do was cheat & buy Shake N Bake--wet the chicken breasts & then coat them with the Shake N Bake--then put them in the deep fryer AFTER the oil is hot--My deep fryer came with knobs & I just turned the knob to Chicken --it only took a few minutes --but you'll know it's done when you pierce it with a fork & no blood comes out --hope this helps --if more of my memory returns I'll let ya know --Bon Appetite !!
