Ur  Welcome too Joe...is it for a dessert or a side dish or in the meal in itself..U can go with Pumkin mousse (dessert)..i luv making it ..its quick and easy..
or as a side dish Roasted Pumkin with Roasted (also) Mixed Vegetables..or in a Beef /Vegetable Stew..Lots of Ideas..
