Mole (pronounced mo-leh, not like the animal) is a type of sauce, and it's also the name of the dish with which it's served (mainly with chicken and rice; the sauce is usually cooked with the chicken for a few minutes so that the meat can absorb it). So spicy and sweet and just plain delicious, especially when you mix it with rice. As I learned while in Mexico earlier this year, there are all kinds of mole. People there sell certain types as a paste, since making it is time-consuming. All you would need to do is add water. My mom bought mole negro (dark mole), mole almendrado (with almonds), and mole ranchero. Soooo gooood! In a nutshell, it's only the best Mexican dish ever!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!  ...unless it's mole verde (green mole). That one tastes nasty.
