The sugar used is a confectionary sugar ( very fine) like you might see on a doughnut. It just cuts the sour taste a bit, and allows you to have more then a couple. If you've had this drink you know that the sour, while good in the begining turns your stomach sooner or later, well at least with me it does. As far as the amount, the more you us the less sour it will taste. 4-5 is all i can take, then i'm looking to move to something else. If you make it right with a good booze it does have a kick,lol. p.s., todays special is green apple martinis... another tart drink with some kick...
