Enchiladas de queso? Hmmm...I dunno, they're a bit overrated, if you ask me. Wouldn't really say they're worth killing for. But then again, I eat them quite frequently, since it's an easy dish to make, so maybe I'm just bored with it. Might also be the reason why I just melt away when I eat mole. I say enfrijoladas are better. Second place to mole, of course. Third place would be chiles rellenos. Or tacos de lengua.
Can't say that I've had food from the Yucatan peninsula. I've BEEN there (Cancun), but never tried the food. Maybe next time I go there I'll try that cochinita pibil. You'll be the first to know.
