Huh. Prolly should'a seen THAT coming in regards to Cancun. Maybe that was why I didn't like it much, either.
My mom and I use monterrey jack cheese and queso cotija for our enchiladas. You want queso oaxaqueño? No need to look further than here in LA (unless that's considered fake queso oaxaqueño...then you'd probably hafta go to Olvera Street). I can mail you a batch if you want. Hopefully it's still fresh when it gets to TN.

Mole (pronounced mo-leh, not like the animal) is a type of sauce, and it's also the name of the dish with which it's served (mainly with chicken and rice; the sauce is usually cooked with the chicken for a few minutes so that the meat can absorb it). So spicy and sweet and just plain delicious, especially when you mix it with rice. As I learned while in Mexico earlier this year, there are all kinds of mole. People there sell certain types as a paste, since making it is time-consuming. All you would need to do is add water. My mom bought mole negro (dark mole), mole almendrado (with almonds), and mole ranchero. Soooo gooood!
In a nutshell, it's only the best Mexican dish ever!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
...unless it's mole verde (green mole). That one tastes nasty. Bleah.
