Huh. Prolly should'a seen THAT coming in regards to Cancun. Maybe that was why I didn't like it much, either.

My mom and I use monterrey jack cheese and queso cotija for our enchiladas. You want queso oaxaqueño? No need to look further than here in LA (unless that's considered fake queso oaxaqueño...then you'd probably hafta go to Olvera Street). I can mail you a batch if you want. Hopefully it's still fresh when it gets to TN.

We all know that Cancún isn't "México". What defines it? Well, when there is a "Wet and Wild" amusement park being advertised and all the streetsigns are in English! Take a "pesero" (minivan crammed with people that only cost a peso, thus the name) to Dzibilchaltún and sit in a hut drinking pulque and THAT is closer. As for the enchiladas de queso. Depends on the queso. I am not speaking quesadillas here, I am talking about full-blown Oaxaca cheese. Very hard to find the real thing anywhere. Sadly, even in most of México. Of course you know the rule of thumb but for others, if the cheese is yellow, you are eating Tex-Mex. Typically soaked in grease. Bleah.

Same goes for tacos (which I would put ahead of any enfrijolada. TRUE tacos, though. If they ask "hard or soft shell?" You are in the wrong place!

Enchiladas de queso? Hmmm...I dunno, they're a bit overrated, if you ask me. Wouldn't really say they're worth killing for. But then again, I eat them quite frequently, since it's an easy dish to make, so maybe I'm just bored with it. Might also be the reason why I just melt away when I eat mole. I say enfrijoladas are better. Second place to mole, of course. Third place would be chiles rellenos. Or tacos de lengua. 

Can't say that I've had food from the Yucatan peninsula. I've BEEN there (Cancun), but never tried the food. Maybe next time I go there I'll try that cochinita pibil. You'll be the first to know.

No estoy de acuerdo. While good, I argue that enchiladas de queso is the best Mexican dish ever! Oaxaca cheese, tortillas de maíz, cremita, salsa verde (o, aún mejor, pico de gallo) and, por supuesto, frijoles y arroz. Aside, ever had good food from la Península Yucateca? Night and day difference from "traditional" - central México / plateau food. Try some cochinita pibil. Almost doesn't seem like it should come from México. ¿Sopa de lima?  One of my favorites. Again, from the Yucután region.

Wish I could find ANY of those great dishes around here. Sadly, I have to make it myself. :(

Mole (pronounced mo-leh, not like the animal) is a type of sauce, and it's also the name of the dish with which it's served (mainly with chicken and rice; the sauce is usually cooked with the chicken for a few minutes so that the meat can absorb it). So spicy and sweet and just plain delicious, especially when you mix it with rice. As I learned while in Mexico earlier this year, there are all kinds of mole. People there sell certain types as a paste, since making it is time-consuming. All you would need to do is add water. My mom bought mole negro (dark mole), mole almendrado (with almonds), and mole rancheroSoooo gooood!

In a nutshell, it's only the best Mexican dish ever!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! 

...unless it's mole verde (green mole). That one tastes nasty. Bleah.
